Abstract
- Current industrial fish processing generates significant amounts of byproducts, accounting for approximately 75% of the total fish weight. These byproducts are a sustainable source of high-value compounds such as collagen, chitin, glycosaminoglycan, peptides, minerals, etc. To ensure the utilization of these compounds for applications in biotechnological or pharmaceutical fields, it is necessary to establish accurate and reliable analysis methods. Thus, the aim of this study is to develop analytical methods using UPLC-HRMS/MS for the quantification of chondroitin sulfate, one of the most prevalent glycosaminoglycans. The optimized conditions showed linearity with the correlation coefficient (r2) greater than 0.99 in the standard calibration curves (3.13 to 50 g/ml). In the next step, we will apply developed method for accurate quantitative analysis of chondroitin sulfate in fish byproduct extracts.
