Abstract
The present study evaluated the effect of starvation on the lipid content and lipid class distribution in the polar and neutral lipids of flounder as well as fatty acid, in Paralichthys olivaceus. The major neutral lipids were triglycerides (TAG) and free sterols plus diglycerides (FS+DAG), whereas the polar lipids were dominated by phosphatidylcholine (PC) and phosphatidylethanolamine (PE). The change of the content and composition of lipids and fatty acid in brain. liver and muscle during the starvation periods for 20 days were analyzed correlated with two metabolic key enzymes, phosphofructokinase (PFK) and glutamate-pyruvate aminotransferase (GPT).
