Abstract
In order to enhance the productivity of the seafood processing industry and to overcome the lack of labor due to the aging of the fishing village population, the need for smart and automated processing technologies of seafood is increasing. In this study, we introduce the development of smart quality inspection systems for three fishery foods such as oysters, fishcakes, and dry seaweed. We developed an intelligent image-based inspection system with hyperspectral imaging and vision cameras for the autonomous detection of extraneous substances on the surface of seafood and removal of the defective products. The hyperspectral and vision image datasets are collected and the deep-learning quality inspection algorithms are developed. Also, we developed a rapid seafood radiation inspection system which is an in-situ screening system to test whether the radioactivity in seafood is under the permissible level (< 100 Bq/kg) regulated by law. Our radiation inspection system can determine the radioactivity and the screening result (pass or fail) through 1 min inspection. The developed seafood inspection systems of quality and radiation are adoptable in the existing seafood manufacturing processes without additional time-consuming and it can reduce labor costs, increase product safety, and have positive effects on the future seafood market increasing export competitiveness.
